- 2 lbs potatoes
- 1 lb ground beef
- 1/2 cup frozen corn
- 1 tbsp chili powder (or to taste)
- 1/2 tsp salt
- 1/2 tsp garlic
- 1/4 tsp pepper
- 1/2 cup water
- 1/2 cup shredded cheddar
- 1/2 cup guacamole
- pico de gallo
- sour cream
Instructions
- Preheat your oven to 400°F (200°C). Cut the potatoes into small cubes and spread them on a baking sheet. Drizzle with olive oil and season with salt, pepper, and garlic. Bake for 25-30 minutes, or until crispy and golden.
- While the potatoes are baking, brown the ground beef in a skillet over medium heat. Once cooked, add the chili powder, salt, pepper, corn, and water. Stir and let simmer for about 5-7 minutes, until the mixture thickens.
- Once the potatoes are done, remove from the oven and assemble your taco bowls. Start with a base of crispy potatoes, then add the beef mixture on top.
- Finally, add your favorite toppings such as shredded cheddar, guacamole, pico de gallo, and sour cream. Serve immediately and enjoy!
Notes
For extra heat, add jalapeños or your favorite hot sauce. Feel free to customize toppings to suit your taste.
