- 3 medium yellow squash thinly sliced
- 2 tablespoons avocado oil
- 2 cloves minced garlic
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1 cup grated parmesan cheese plus extra for tops of squash
- dried parsley
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, combine the avocado oil, minced garlic, black pepper, smoked paprika, and salt.
- Toss the sliced yellow squash in the oil mixture until well coated.
- Place the coated squash slices on a baking sheet lined with parchment paper.
- Sprinkle grated Parmesan cheese generously over the top of the squash.
- Bake in the preheated oven for 25-30 minutes or until the squash is tender and the cheese is golden brown.
- Remove from the oven and garnish with dried parsley and extra Parmesan cheese before serving.
Notes
For extra crispiness, you can broil the squash for the last 2 minutes of baking. Adjust seasoning to taste.
