Description

Crispy Parmesan Crusted Yellow Squash is a delicious and healthy side dish that’s packed with flavor. The combination of perfectly baked yellow squash and a crunchy Parmesan crust makes it a delightful addition to any meal.

  • 3 medium yellow squash thinly sliced
  • 2 tablespoons avocado oil
  • 2 cloves minced garlic
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1 cup grated parmesan cheese plus extra for tops of squash
  • dried parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine the avocado oil, minced garlic, black pepper, smoked paprika, and salt.
  3. Toss the sliced yellow squash in the oil mixture until well coated.
  4. Place the coated squash slices on a baking sheet lined with parchment paper.
  5. Sprinkle grated Parmesan cheese generously over the top of the squash.
  6. Bake in the preheated oven for 25-30 minutes or until the squash is tender and the cheese is golden brown.
  7. Remove from the oven and garnish with dried parsley and extra Parmesan cheese before serving.

Notes

For extra crispiness, you can broil the squash for the last 2 minutes of baking. Adjust seasoning to taste.
