These Crispy Zucchini-Feta Balls are a delightful vegetarian treat, combining the fresh taste of zucchini with the creamy richness of feta, perfect for any occasion.

- 2 medium zucchinis (about 400 g)
- 150 g feta cheese (crumbled)
- 1 egg
- 50 g breadcrumbs
- 2 tbsp oats (optional)
- 2 tbsp freshly chopped parsley
- 1 clove garlic (finely chopped)
- 1 tsp dried oregano
- 1 tsp salt
- ½ tsp pepper
- 2 tbsp olive oil
Instructions
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel.
- In a bowl, combine the grated zucchini, crumbled feta, egg, breadcrumbs, oats (if using), parsley, garlic, oregano, salt, and pepper. Mix until well combined.
- Form the mixture into small balls and place them on the prepared baking sheet.
- Drizzle olive oil over the zucchini balls for added flavor and to help achieve a crispy texture.
- Bake in the preheated oven for 25-30 minutes, or until golden brown and crispy.
- Remove from the oven and allow to cool slightly before serving.
Notes
Feel free to modify the herbs and spices to suit your taste. These balls can also be served with a yogurt dip for extra flavor.
