Description
Deliciously crispy zucchini fries paired with a tangy garlic aioli, perfect for a healthy snack or appetizer.
Ingredients

- 3 medium zucchinis
- cut into sticks (3–4 inches long)
- ½ cup all-purpose flour
- 2 large eggs
- beaten
- 1 cup panko breadcrumbs
- ½ cup Parmesan cheese
- grated
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- olive oil spray
- for baking or air frying
- ½ cup mayonnaise
- 1 clove garlic
- finely grated or minced
- 1 teaspoon lemon juice
- 1 pinch salt and pepper
Instructions
- Preheat the oven to 425°F (220°C) or prepare the air fryer.
- In a shallow dish, place the flour. In another dish, beat the eggs. In a third dish, mix the panko breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
- Coat each zucchini stick in flour, dip into the beaten eggs, and then roll in the panko mixture until well coated.
- Arrange the coated zucchini fries on a baking sheet lined with parchment paper or in the air fryer basket. Lightly spray with olive oil.
- Bake for 20-25 minutes, or air fry at 400°F (200°C) for about 15 minutes, until golden brown and crispy.
- While the fries are baking, prepare the garlic aioli by mixing together mayonnaise, grated garlic, lemon juice, salt, and pepper in a bowl.
- Once the zucchini fries are done, serve them warm with the garlic aioli on the side.
Notes
For extra crunch, consider double coating the zucchini fries by dipping them again in egg and breadcrumbs before baking. You can also add spices to the aioli for added flavor.
