- 2 packages (1 ounce
- each) dry onion soup mix
- 1/2 teaspoon paprika
- 2 pounds beef stew meat
- or a boneless beef roast
- cut in 1-inch pieces
- 5 medium potatoes peeled and diced
- 2 to 3 cups baby carrots
- 1 small yellow onion chopped
- 2 cans (10 ounces
- each) cream of celery soup
- 1 cup ketchup
Instructions
- In a large bowl, combine the dry onion soup mix and paprika. Add the beef stew meat, tossing to coat evenly.
- Place the diced potatoes, baby carrots, and chopped onion in the bottom of the Crock Pot.
- Layer the coated beef on top of the vegetables.
- In a separate bowl, mix together the cream of celery soup and ketchup. Pour this mixture over the beef and vegetables.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the flavors have melded.

Feel free to customize the vegetables based on your preferences. You can add peas or green beans for extra color and nutrition.
