Instructions
- Pat the beef tips dry with paper towels and season with salt and black pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the beef in batches and sear for 2–3 minutes per side, until browned. Transfer the beef to the slow cooker.
- In a bowl, whisk together the beef broth, cream of mushroom soup, dry onion soup mix, and Worcestershire sauce until mostly smooth.
- Add the minced garlic, diced onion, and optional mushrooms and thyme to the slow cooker.
- Pour the gravy mixture over the beef and stir gently to coat everything.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the beef is tender.
- Check the gravy consistency. If it is too thin, combine the cornstarch and cold water to make a slurry.
- Stir the slurry into the gravy during the final 10–15 minutes of cooking and allow it to thicken.
- Taste and adjust the seasoning if needed.
- Serve the beef tips and gravy hot over mashed potatoes, rice, or egg noodles.
