- 1 green bell pepper (seeded and sliced)
- 6 oz tomato paste (no salt added)
- 14 1/2 oz diced tomatoes
- 3 cloves garlic (minced)
- 1 tbsp Italian seasoning
- medium chicken thighs (skins removed)
Instructions
- In the crock pot, combine the sliced onion, sliced green bell pepper, tomato paste, diced tomatoes, minced garlic, and Italian seasoning.
- Add the chicken thighs on top of the vegetable mixture, ensuring they are well coated with the sauce.
- Cover and cook on low for about 4-5 hours or on high for 2-3 hours, until the chicken is tender and fully cooked.
- Once done, shred the chicken and stir it back into the sauce before serving.
Notes
