Description

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 packet chicken gravy mix
  • 1 cup chicken broth
  • 1/2 cup sour cream, optional
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt, or to taste
  • 1 tablespoon cornstarch, optional, for thickening
  • 2 tablespoons cold water, optional, for cornstarch slurry
  • Fresh parsley, for garnish, optional

Instructions

  1. Pat the chicken breasts dry and season lightly with salt, black pepper, and garlic powder.
  2. Place the seasoned chicken breasts in a single layer in the bottom of the crockpot.
  3. In a bowl, whisk together the cream of chicken soup, chicken gravy mix, and chicken broth until smooth.
  4. Pour the gravy mixture evenly over the chicken, making sure the pieces are well covered.
  5. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is fully cooked and tender.
  6. Once cooked, shred the chicken directly in the crockpot using two forks. Stir the shredded chicken into the gravy.
  7. For extra creaminess, stir in the sour cream before serving.
  8. If the gravy is too thin, mix the cornstarch with cold water to make a slurry. Stir it into the crockpot during the last 30 minutes of cooking.
  9. Garnish with fresh parsley and serve warm over mashed potatoes, rice, egg noodles, or with crusty bread.

Notes

  • Use fresh or completely thawed chicken rather than frozen chicken for slow-cooker preparation.
  • Chicken thighs can be substituted for chicken breasts for a richer, juicier result.
  • Use low-sodium chicken broth and gravy mix for a less salty version.
  • Greek yogurt can be substituted for sour cream.
  • If the gravy becomes too thick, stir in a small splash of chicken broth or water.
