- 6 large chicken thighs skinless and bone-in
- 1 tablespoon olive oil divided
- 1 teaspoon paprika mild or smoked
- 1/2 teaspoon brown sugar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 pinch cayenne pepper optional
- 1 teaspoon coarse salt
- 1/4 teaspoon cracked pepper
- 1/2 cup honey
- 1/2 cup unsalted butter
- 6 cloves garlic finely chopped or minced
- 2 tablespoons low sodium soy sauce
- 2 tablespoons rice wine vinegar or cider vinegar
- 1 pinch salt
- 1/2 teaspoon cracked pepper
- 1/4 cup water or chicken broth
- 2 teaspoons cornstarch
Instructions
- In a small bowl, combine the rub ingredients: paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and cracked pepper. Mix well.
- Rub the spice mixture all over the chicken thighs.
- In a skillet, heat 1/2 tablespoon of olive oil over medium heat. Sear the chicken thighs on both sides until lightly browned, about 3-4 minutes per side. Transfer the thighs to the crockpot.
- In the same skillet, add the remaining olive oil and sauté the minced garlic for about 1 minute. Add honey, butter, soy sauce, rice wine vinegar, salt, and pepper. Stir until the butter melts and the ingredients are well combined.
- Pour the honey garlic sauce over the chicken in the crockpot. Add water or chicken broth.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, remove the chicken and set aside. In a small bowl, mix cornstarch with a little water to create a slurry. Stir this into the remaining sauce in the crockpot, then switch to high heat to thicken slightly, about 10 minutes.
- Serve the chicken with the sauce over rice or veggies.
Notes
For a spicier kick, add more cayenne pepper in the rub. This dish pairs well with rice or steamed vegetables.
