  • 6 large chicken thighs skinless and bone-in
  • 1 tablespoon olive oil divided
  • 1 teaspoon paprika mild or smoked
  • 1/2 teaspoon brown sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 pinch cayenne pepper optional
  • 1 teaspoon coarse salt
  • 1/4 teaspoon cracked pepper
  • 1/2 cup honey
  • 1/2 cup unsalted butter
  • 6 cloves garlic finely chopped or minced
  • 2 tablespoons low sodium soy sauce
  • 2 tablespoons rice wine vinegar or cider vinegar
  • 1 pinch salt
  • 1/2 teaspoon cracked pepper
  • 1/4 cup water or chicken broth
  • 2 teaspoons cornstarch

Instructions

  1. In a small bowl, combine the rub ingredients: paprika, brown sugar, garlic powder, onion powder, cayenne pepper, salt, and cracked pepper. Mix well.
  2. Rub the spice mixture all over the chicken thighs.
  3. In a skillet, heat 1/2 tablespoon of olive oil over medium heat. Sear the chicken thighs on both sides until lightly browned, about 3-4 minutes per side. Transfer the thighs to the crockpot.
  4. In the same skillet, add the remaining olive oil and sauté the minced garlic for about 1 minute. Add honey, butter, soy sauce, rice wine vinegar, salt, and pepper. Stir until the butter melts and the ingredients are well combined.
  5. Pour the honey garlic sauce over the chicken in the crockpot. Add water or chicken broth.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  7. Once cooked, remove the chicken and set aside. In a small bowl, mix cornstarch with a little water to create a slurry. Stir this into the remaining sauce in the crockpot, then switch to high heat to thicken slightly, about 10 minutes.
  8. Serve the chicken with the sauce over rice or veggies.

Notes

For a spicier kick, add more cayenne pepper in the rub. This dish pairs well with rice or steamed vegetables.
