  • 1 cup (240 ml) vegetable oil
  • 3 large eggs
  • room temperature
  • 1 cup (240 ml) buttermilk
  • room temperature
  • 2 teaspoons vanilla extract
  • 1 tablespoon white vinegar
  • 1 tablespoon black gel food coloring
  • 8 ounces (226 grams) cream cheese
  • softened
  • ½ cup (113 grams) unsalted butter
  • softened
  • 3 cups (360 grams) powdered sugar
  • sifted
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, combine sugar and oil, then add eggs, buttermilk, vanilla extract, vinegar, and black gel food coloring. Mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the batter evenly between the prepared cake pans and smooth the tops.
  6. Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  7. For the frosting, beat the softened cream cheese and butter in a bowl until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until creamy.
  8. Add milk or cream, one tablespoon at a time, until the desired frosting consistency is achieved.
  9. Once the cakes are completely cool, frost the top of one layer, place the second layer on top, and frost the top and sides of the cake.
  10. To create a spiderweb design, pipe icing in circles outward from the center and then drag a toothpick or knife from the center to the edge, creating a web effect.
