- 1/2 red onion
- 1 ripe tomato
- 1 jalapeño pepper
- 2 tablespoons chopped cilantro

- Salt & pepper to taste
Instructions
- Dice the peaches and tomatoes and place them in a mixing bowl.
- Finely chop the red onion and jalapeño, then add them to the bowl.
- Stir in the chopped cilantro and squeeze the juice of half a lime over the mixture.

Notes
For a milder salsa, remove the seeds from the jalapeño. This salsa is best enjoyed fresh but can be stored in the refrigerator for up to 3 days.
