Description

A homemade, copycat version of the iconic British Cadbury Double Decker bar! This delicious sliceable treat features a bottom layer of crispy, chocolate-coated rice cereal topped with a light, chewy honey-vanilla nougat layer, all fully encased in smooth, creamy milk chocolate.

For the Chocolate Shell:

  • 14 oz (400 g) milk chocolate, chopped (divided)

For the Crispy Cereal Bottom Layer:

  • 2 cups (60 g) crispy rice cereal

  • 1/2 cup (100 g) milk chocolate chips

  • 2 tbsp golden syrup (or light corn syrup)

  • 1 tbsp unsalted butter

For the Chewy Nougat Top Layer:

  • 1 1/2 cups (300 g) granulated sugar

  • 1/2 cup (120 ml) water

  • 1/3 cup (80 ml) honey or golden syrup

  • 2 large egg whites, room temperature

  • 1 tsp pure vanilla extract

  • Pinch of salt


Instructions

  1. Prep the Pan: Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

  2. Create Bottom Base (Crispy Layer): In a heatproof bowl set over simmering water (or in short bursts in the microwave), melt 1/2 cup milk chocolate chips with 1 tbsp butter and 2 tbsp golden syrup until smooth. Fold in the crispy rice cereal until evenly coated. Press the mixture firmly into an even layer at the bottom of the prepared pan. Chill in the fridge for 15 minutes.

  3. Make the Nougat Sugar Syrup: In a saucepan, combine sugar, water, and 1/3 cup honey. Heat over medium-high until the mixture reaches 240°F (115°C) on a candy thermometer (soft-ball stage).

  4. Whip the Nougat: While the syrup heats, beat egg whites with a pinch of salt in a stand mixer on medium speed until stiff peaks form.

  5. Combine & Fold: Slowly stream the hot sugar syrup into the whipped egg whites with the mixer running on low. Once incorporated, beat on medium-high speed for 5–7 minutes until thick, glossy, and lukewarm. Stir in vanilla extract.

  6. Layer the Bar: Spread the chewy nougat mixture evenly over the chilled crispy cereal layer. Place in the refrigerator to set for at least 2 hours.

  7. Coat in Milk Chocolate: Melt the remaining milk chocolate. Lift the set double-decker slab out of the pan using the parchment handles and cut into individual rectangular bars. Dip each bar in melted milk chocolate until fully coated, then place on a wire rack or parchment paper to set.

Notes

  • Chocolate Choice: For the most authentic UK taste, use high-quality British milk chocolate (such as Cadbury Dairy Milk).

  • Handling Sticky Nougat: Coat your spatula or hands with a tiny bit of neutral oil or non-stick cooking spray to spread the nougat layer easily without sticking.
