Ingredients

2 pounds of starchy potatoes
peeled and chopped into chunks
4 tablespoons of unsalted butter
softened
2 large egg yolks
at room temperature
1/2 cup of heavy cream
Salt to taste
Black pepper to taste
Instructions
- Place the chopped potatoes in a pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Mash the potatoes until smooth.
- Add the softened butter, egg yolks, heavy cream, salt, and black pepper to the mashed potatoes. Mix until well combined and creamy.
- Preheat the oven to 400°F (200°C).
- Transfer the potato mixture to a piping bag and pipe it into decorative shapes on a baking sheet.
- Bake in the preheated oven for 15-20 minutes or until golden brown on top.
Notes
For added flavor, consider mixing in grated cheese or herbs into the potato mixture before baking.
