- 1 can (13.5 fl oz / 400ml) coconut milk
- 2–3 tablespoons red curry paste
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or sugar
- 1 teaspoon sesame oil
- 1 large garlic clove
- 1 small cube of ginger
- 16–20 dumplings of choice
- 2 bok choy bulbs
- 1 zucchini or any vegetable of choice
- sesame seeds
- sliced green onions
- cilantro/coriander
- chili crisp oil
- white jasmine rice or noodles
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the coconut milk, red curry paste, soy sauce, rice vinegar, honey or sugar, sesame oil, minced garlic, and grated ginger to create the red curry broth.
- Spread the bok choy and zucchini in a single layer in a baking dish.
- Place the dumplings over the vegetables and pour the red curry broth evenly over the top.
- Cover the dish with foil and bake for about 20 minutes.
- Remove the foil and bake for an additional 10 minutes until the dumplings are cooked through and slightly golden.
- Garnish with sesame seeds, sliced green onions, cilantro, and chili crisp oil before serving.
- Serve hot with white jasmine rice or noodles.
Notes
Feel free to use any type of dumplings you like, and adjust the spiciness of the broth to your preference.
