Ingredients

  • 1 can (13.5 fl oz / 400ml) coconut milk
  • 23 tablespoons red curry paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon sesame oil
  • 1 large garlic clove
  • 1 small cube of ginger
  • 1620 dumplings of choice
  • 2 bok choy bulbs
  • 1 zucchini or any vegetable of choice
  • sesame seeds
  • sliced green onions
  • cilantro/coriander
  • chili crisp oil
  • white jasmine rice or noodles

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the coconut milk, red curry paste, soy sauce, rice vinegar, honey or sugar, sesame oil, minced garlic, and grated ginger to create the red curry broth.
  3. Spread the bok choy and zucchini in a single layer in a baking dish.
  4. Place the dumplings over the vegetables and pour the red curry broth evenly over the top.
  5. Cover the dish with foil and bake for about 20 minutes.
  6. Remove the foil and bake for an additional 10 minutes until the dumplings are cooked through and slightly golden.
  7. Garnish with sesame seeds, sliced green onions, cilantro, and chili crisp oil before serving.
  8. Serve hot with white jasmine rice or noodles.

Notes

Feel free to use any type of dumplings you like, and adjust the spiciness of the broth to your preference.
