- 2 tablespoons olive oil

- 1/4 cup flour
- 1/2 teaspoon garlic powder
- 1/2 teaspoon celery salt
- 2 pounds stew meat (chuck roast cut into 1-1.5″ cubes)
- 2 tablespoons butter
- 1 yellow onion
- diced
- 1 cup sliced celery
- 6 cloves garlic
- minced
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 2 tablespoons Worcestershire sauce
- 1 tablespoon balsamic vinegar
- 4 cups beef stock
- 2 bay leaves
- 3 tablespoons cornstarch
- 2 cups carrots chopped into 3/4” pieces
- 1.5 pounds baby yellow potatoes
- cut into 1” pieces
- Kosher salt
- fresh cracked pepper
- fresh chopped parsley for garnish
Instructions
- In a large Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Season the stew meat with salt and pepper, then toss it in flour, ensuring all pieces are coated.
- Add the floured beef to the pot and brown on all sides, about 5-7 minutes. Remove the beef and set aside.
- In the same pot, add the remaining olive oil and butter. Sauté the onion, celery, and garlic until they are softened, about 5 minutes.
- Stir in the tomato paste, garlic powder, celery salt, thyme, Worcestershire sauce, and balsamic vinegar. Cook for another 2 minutes until aromatic.
- Return the browned beef to the pot and pour in the beef stock. Add bay leaves, carrots, and potatoes. Bring to a boil.
- Once boiling, reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.
- In a small bowl, mix cornstarch with a few tablespoons of water to form a slurry. Stir the slurry into the stew and let it cook for an additional 5-10 minutes until thickened.
- Remove bay leaves, adjust seasoning with salt and pepper, and serve hot, garnished with fresh parsley.
