  • 1/4 cup (56g) light brown sugar

  • 1/2 cup (120ml) caramel sauce
  • 1/2 cup (120ml) heavy whipping cream
  • cold
  • 1/4 cup (29g) powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter until well combined, then press the mixture into the bottom of the prepared springform pan.
  3. In a large bowl, beat the cream cheese until smooth, then add sugar and flour, mixing until fluffy.
  4. Add sour cream, vanilla extract, and ground cinnamon, mixing until fully incorporated.
  5. Add eggs one at a time, beating on low speed after each addition until just combined.
  6. Pour the cheesecake filling over the crust in the springform pan and bake for 30-35 minutes or until set.
  7. While baking, prepare the caramel apple topping by mixing chopped apples, brown sugar, cinnamon, nutmeg, and lemon juice in a skillet over medium heat until apples soften and caramelize.
