Instructions
- Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
- In a medium bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter until well combined, then press the mixture into the bottom of the prepared springform pan.
- In a large bowl, beat the cream cheese until smooth, then add sugar and flour, mixing until fluffy.
- Add sour cream, vanilla extract, and ground cinnamon, mixing until fully incorporated.
- Add eggs one at a time, beating on low speed after each addition until just combined.
- Pour the cheesecake filling over the crust in the springform pan and bake for 30-35 minutes or until set.
- While baking, prepare the caramel apple topping by mixing chopped apples, brown sugar, cinnamon, nutmeg, and lemon juice in a skillet over medium heat until apples soften and caramelize.
