- 1 red bell pepper diced
- 1 cup uncooked parboiled long-grain brown rice
- 3 tablespoons homemade or store-bought salsa
- 1/8 teaspoon cayenne pepper
- 1 cup corn kernels frozen
- 1 14 ounce can low sodium black beans drained and rinsed
- 5 cups shredded chicken
- 3 cups reduced sodium chicken broth
- 1 4 ounce can mild green chilies
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh cilantro
- 1 1/4 cups shredded Monterey Jack cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the onion and red bell pepper, sautéing until softened.
- Stir in the uncooked rice, salsa, cayenne pepper, corn, black beans, shredded chicken, chicken broth, and green chilies.
- Bring the mixture to a boil, then reduce heat and simmer for about 15 minutes, or until the rice is tender.
- Transfer the mixture to a greased baking dish. Top with shredded Monterey Jack cheese.
- Bake in the oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Garnish with chopped fresh cilantro before serving.
