  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups chicken broth
  • 1 cup self-rising flour
  • ½ cup whole milk
  • 1 large egg
  • 1 cup frozen peas and carrots, optional
  • ½ cup diced celery, optional
  • ½ tsp garlic powder
  • ½ tsp dried thyme
  • ½ tsp black pepper
  • ¼ tsp salt
  • 2 tbsp chopped fresh parsley, optional

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Spread the shredded cooked chicken evenly across the bottom of the prepared baking dish.
  3. In a bowl, whisk together the cream of chicken soup and chicken broth until smooth. Stir in the garlic powder, thyme, black pepper, and salt.
  4. Pour the creamy broth mixture evenly over the chicken. Add the peas, carrots, and celery if using.
  5. In a separate bowl, combine the self-rising flour, milk, and egg. Stir just until a thick, drop-style batter forms. Avoid overmixing.
  6. Drop spoonfuls of the dumpling batter evenly over the chicken mixture, leaving a little space between each portion.
  7. Bake uncovered for 30–40 minutes, or until the casserole is bubbling and the dumplings are puffed and golden. Insert a toothpick into the center of a dumpling to make sure it comes out clean.
  8. Remove from the oven and let the casserole rest for 5–10 minutes. Garnish with fresh parsley and serve warm.

Notes

  • Rotisserie chicken or leftover roasted chicken works especially well and saves preparation time.
  • Keep the dumpling batter slightly thick and avoid overmixing so the dumplings remain tender.
  • If the casserole becomes too thick while baking, add a small splash of chicken broth.
  • For extra vegetables, add peas, carrots, celery, green beans, or chopped spinach.
  • Leftovers can be refrigerated in an airtight container for 3–4 days.
  • Freeze cooled portions in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
  • To reheat, warm gently in the oven at 350°F (175°C) or microwave individual portions. Add a splash of broth if needed.
