- 3 cups milk (dairy or plant-based)
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- 1/4 tsp salt
- 1/2 tsp ground cloves
- Optional: chopped walnuts
- Optional: cinnamon sprinkle
- Optional: dairy-free whipped cream
- Optional: pumpkin seeds
Instructions
- In a medium saucepan, combine the rolled oats and milk. Bring to a gentle boil over medium heat, stirring occasionally.
- Once boiling, reduce the heat to low and stir in the pumpkin puree, maple syrup, vanilla extract, and all the spices (cinnamon, nutmeg, ginger, salt, and cloves).
- Cook for about 5-7 minutes, stirring frequently, until the oatmeal reaches your desired consistency.
- Remove from heat and let it sit for a minute or two to thicken further.
- Serve warm in bowls, garnished with optional chopped walnuts, a sprinkle of cinnamon, dairy-free whipped cream, or pumpkin seeds if desired.
Notes
Feel free to adjust the sweetness by adding more or less maple syrup according to your taste. You can also substitute the spices with a pre-mixed pumpkin spice blend for convenience.
