Ingredients

  • 1 15- oz. can black beans
  • 1 15.25- oz. can corn undrained
  • 1 10- oz. can Rotel tomatoes undrained
  • 1 package ranch dressing mix
  • 1 tsp. cumin
  • 1 Tbsp. chili powder
  • 1 tsp. onion powder
  • 1 8- oz package light cream cheese
  • 2 chicken breasts

Instructions

  1. In the slow cooker, combine the black beans, corn, Rotel tomatoes, ranch dressing mix, cumin, chili powder, and onion powder.
  2. Place the chicken breasts on top of the mixture and cover with the lid.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, add the cream cheese and allow it to melt before stirring it into the chili.
  5. Stir well before serving and enjoy your creamy chili!
