Whether served for Easter brunch or a cozy family breakfast, this casserole is guaranteed to become a seasonal favorite.

Ingredients

Scale

Casserole

  • 56 cups Colomba bread, cubed (or croissants or sweet bread)
  • 2 tablespoons butter, melted
  • 3 large eggs
  • 1¼ cups milk
  • 2 tablespoons brown sugar, lightly packed
  • ½ tablespoon ground cinnamon
  • ¼ teaspoon salt

Crumble Topping

  • ½ tablespoon ground cinnamon
  • ¼ cup brown sugar, lightly packed
  • 3 tablespoons all-purpose flour
  • 3 tablespoons butter

Optional Toppings

  • 2 tablespoons chopped hazelnuts, almonds, or walnuts
  • Powdered sugar, for dusting
  • Maple syrup, for serving

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a medium baking dish with butter or cooking spray.
  3. Place the cubed bread into the baking dish and drizzle with melted butter.
  4. In a large bowl, whisk together eggs, milk, brown sugar, cinnamon, and salt.
  5. Pour the egg mixture evenly over the bread cubes. Gently press the bread down so it absorbs the liquid.
  6. Let the mixture sit for 10–15 minutes.
  7. In a small bowl, combine cinnamon, brown sugar, flour, and butter until crumbly.
  8. Sprinkle the crumble topping evenly over the casserole. Add chopped nuts if desired.
  9. Bake for 30–35 minutes or until golden brown and set in the center.
  10. Cool slightly before serving. Dust with powdered sugar and drizzle with maple syrup if desired.

Notes

  • Colomba bread gives a traditional Easter flavor, but brioche or croissants work beautifully.
  • For a savory version, omit the sugar and cinnamon and add cheese, spinach, or cooked sausage.
  • This casserole can be assembled the night before and refrigerated overnight.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
