- 4 tablespoons butter
- 1 tablespoon olive oil or vegetable oil
- 3 pounds onions
- peeled
- halved and thinly sliced
- ¾ teaspoon Kosher or sea salt

- ¾ cup dry white wine
- 1 tablespoon dry sherry
- 2 tablespoons all-purpose flour
- 8 cups beef broth or beef stock
- 1 bay leaf
- 2 fresh thyme sprigs
- or ½ teaspoon dried thyme
- ½ teaspoon Worcestershire sauce
- 1 small baguette
- sliced ½-inch thick
- 6 ounces Gruyère cheese
- grated
- Optional: Garnish with fresh thyme leaves or chopped chives.
Instructions
- In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions, salt, and pepper, cooking until the onions are soft and caramelized, about 20-25 minutes.
- Stir in the wine and sherry, scraping the bottom of the pot to deglaze it. Let it simmer for a few minutes.
- Sprinkle in the flour, and stir until combined. Gradually add the beef broth, bay leaf, thyme, and Worcestershire sauce, and bring the mixture to a boil. Reduce heat and let it simmer for 15 minutes.
- Preheat the oven to broil. Toast the baguette slices until golden brown.
- Ladle the soup into oven-safe bowls, place a few toasted baguette slices on top, and sprinkle with grated Gruyère cheese.
- Broil the bowls for 3-5 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, garnish with fresh thyme or chives, and serve hot.
Notes
For a vegetarian version, substitute the beef broth with vegetable broth and skip the Worcestershire sauce. Feel free to adjust the seasoning to your taste.
