- 2 cups apple cider
- 3 1/2 cups all-purpose flour
- 2/3 cups packed brown sugar
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon nutmeg
- 1/4 teaspoon cinnamon
- 1/4 teaspoon allspice
- 2 large eggs (room temperature)
- 6 Tablespoon butter (melted and cooled)
- Oil for deep-fat frying
- 1/2 cup granulated sugar
- 2–3 teaspoons ground cinnamon
Instructions
- In a saucepan, bring apple cider to a boil and reduce it to 1 cup. Let cool.
- In a large bowl, whisk together flour, brown sugar, baking powder, salt, baking soda, spices, and set aside.
- In another bowl, beat the eggs, then mix in the melted butter and reduced apple cider.
- Combine wet and dry ingredients until just mixed. Do not overmix.
- Heat oil in a deep fryer or heavy-bottomed pot to 350°F (175°C).
- Drop spoonfuls of batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove and drain on paper towels.
- Mix granulated sugar and cinnamon, then roll warm donuts in the mixture before serving.
Notes
For extra flavor, let the apple cider reduce further for a more concentrated taste. Ensure the oil temperature is accurate for even frying.
