- 4 boneless chicken breasts or 8 chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon dried oregano
- ¼ teaspoon cayenne pepper
- 4 cups warm water
- ¼ cup kosher salt
- 2 tablespoons brown sugar
- 2 cloves garlic smashed
Instructions
- In a large bowl, combine warm water, kosher salt, brown sugar, and smashed garlic to create the simple brine. Stir until salt and sugar dissolve.
- Submerge chicken in the brine, cover, and refrigerate for at least 30 minutes to 2 hours.
- Preheat grill to medium-high heat.
- In a small bowl, mix olive oil, salt, black pepper, garlic powder, paprika, oregano, and cayenne pepper.
- Remove chicken from brine, rinse under cold water, and pat dry. Brush the seasoning mixture onto both sides of chicken.
- Grill chicken for 6-7 minutes per side or until internal temperature reaches 165°F (75°C).
- Remove from grill and let rest for 5 minutes before serving.
Notes
For extra flavor, marinate the chicken overnight. Adjust the spice level by adding more cayenne pepper if desired.
