Description

This easy hamburger and rice casserole combines ground beef, uncooked long-grain rice, French onion soup, beef consomme, and butter for a hearty, budget-friendly comfort meal. Everything bakes together in one dish, making it perfect for busy weeknights and meal prep.

  • 2 cups uncooked long-grain white rice, such as jasmine or basmati
  • 1 can (10.5 oz) French onion soup
  • 1 can (10.5 oz) beef consomme
  • 1/2 cup unsalted butter, cut into small pieces
  • Oil, for browning the beef
  • Optional: salt and black pepper, to taste
  • Optional: chopped onions or garlic
  • Optional: frozen peas, carrots, or bell peppers
  • Optional: 1 cup shredded cheddar or mozzarella cheese

Instructions

  1. Preheat the oven to 425°F (220°C). Grease a 9×13-inch baking dish.
  2. Heat a little oil in a large skillet over medium heat. Add the ground beef and cook for 8–10 minutes, breaking it apart as it browns, until fully cooked with no pink remaining. Drain excess grease.
  3. Spread the cooked ground beef evenly in the prepared baking dish.
  4. Sprinkle the uncooked long-grain rice evenly over the beef.
  5. Pour the French onion soup and beef consomme over the rice and beef. Gently stir to distribute the ingredients.
  6. Dot the top evenly with pieces of unsalted butter.
  7. Cover the baking dish tightly with aluminum foil.
  8. Bake covered for 30 minutes.
  9. Remove the foil and continue baking uncovered for another 30 minutes, or until the rice is tender and has absorbed the liquid.
  10. If desired, add shredded cheese during the final 5–10 minutes of baking and cook until melted and bubbly.
  11. Let the casserole rest for a few minutes before serving.

Notes

  • Use long-grain white rice such as jasmine or basmati for the fluffiest texture.
  • Do not pre-cook the rice; it cooks directly in the casserole.
  • Avoid excessive stirring while baking, as this can make the rice sticky.
  • If the rice is not fully tender after the first 30 minutes, add a small splash of broth or water before continuing to bake.
  • Ground turkey or chicken can replace the ground beef.
  • For a healthier version, use lean ground beef, reduce the butter, add vegetables, or use brown rice with additional liquid and a longer cooking time.
  • Leftovers can be refrigerated in an airtight container for up to 4 days.
  • Freeze portions for up to 3 months. Thaw overnight in the refrigerator before reheating.
  • To reheat, cover and warm in a 350°F oven for about 20 minutes, or microwave individual portions for 1–2 minutes.
