This Easy High Protein Crustless Chicken Pot Pie is a healthy twist on a classic comfort food, packed with protein and vegetables, and requires no pie crust!

- 1 lb cooked chicken breast
- cubed
- 1 cup frozen peas and carrots mix
- 1/2 cup diced celery
- 1/2 cup diced yellow onion
- 1 cup low-sodium chicken bone broth
- 1/2 cup plain non-fat Greek yogurt
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp cornstarch mixed with 1 tbsp cold water
Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).
- In a large skillet, heat the olive oil over medium heat and sauté the diced onion and celery until softened.
- Add the frozen peas and carrots to the skillet and cook for an additional 5 minutes.
- Stir in the cubed chicken breast, thyme, garlic powder, salt, and black pepper.
- In a separate bowl, mix the Greek yogurt with the chicken bone broth until smooth, then add to the skillet and mix well.
- Add the cornstarch mixture to the skillet, stirring until the sauce thickens.
- Transfer the mixture into a greased baking dish and spread it evenly.
- Bake in the preheated oven for 25-30 minutes or until bubbling and golden on top.
- Allow to cool for a few minutes before serving.
Notes
Feel free to add other vegetables like corn or bell peppers for added flavor and nutrition.
