- 1 tablespoon fresh lemon juice
- ½ cup packed brown sugar
- ¼ cup granulated sugar

- ¼ teaspoon salt
- ¾ cup water
- divided
- 3 tablespoons cornstarch
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, toss the sliced apples with lemon juice, brown sugar, granulated sugar, cinnamon, nutmeg, and salt.
- In a saucepan, combine ½ cup of water with cornstarch and stir until smooth.
- Add the apple mixture and remaining water to the saucepan, and cook over medium heat until the mixture thickens and bubbles, stirring frequently.
- Remove from heat and stir in butter and vanilla extract until melted and combined.
- Let the filling cool before using it in your favorite pie crust or enjoy it as a topping.
Notes
For best results, use a mix of sweet and tart apples. This filling can also be made ahead and stored in the refrigerator for up to a week.
