- ¾ cup sugar
- 1 cup mascarpone (room temperature)
- 2½ tablespoons vegetable oil (I use corn or sunflower oil)
- 2 medium pears (room temperature)*
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, salt, cornstarch, baking powder, and baking soda.
- In a large bowl, beat the eggs and sugar until light and fluffy.
- Add the mascarpone and vegetable oil to the egg mixture, mixing until well incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Peel and slice the pears, then gently fold them into the batter.
- Pour the batter into the prepared cake pan and smooth it out.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
