- 3 tbsp maple syrup
- 2 tbsp Dijon mustard
- 2 tbsp olive oil
- 3 cloves garlic

- Salt and freshly cracked black pepper

Instructions
- Preheat the oven to 400°F (200°C).
- Peel and dice the sweet potatoes into cubes.
- In a large bowl, whisk together the maple syrup, Dijon mustard, olive oil, minced garlic, smoked paprika, salt, pepper, and thyme.
- Add the chicken thighs to the bowl and coat them well with the marinade.
- Spread the diced sweet potatoes on a baking sheet and drizzle with a little olive oil, salt, and pepper. Toss to combine.
- Place the marinated chicken thighs on the baking sheet with the sweet potatoes.
