Ingredients

  • 1/3 cup (30g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon instant coffee powder or espresso powder (optional)
  • 1/2 cup (113g) unsalted butter
  • softened (for frosting)
  • 1 1/2 cups (180g) powdered sugar
  • 1/4 cup (20g) unsweetened cocoa powder (for frosting)
  • 2 tablespoons heavy cream or whole milk
  • 1/2 teaspoon vanilla extract (for frosting)
  • pinch of salt (for frosting)
  • white icing or melted white chocolate (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  3. Add the eggs and vanilla extract, whisking until fully combined.
  4. In a separate bowl, mix together the flour, cocoa powder, salt, baking powder, and optional coffee powder.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Spoon the batter into the mini muffin pan, filling each cup about 2/3 full.
  7. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the brownie bites cool completely in the pan before transferring them to a wire rack.
  9. In the meantime, prepare the frosting by beating together softened butter, powdered sugar, cocoa powder, cream, vanilla extract, and salt until smooth.
  10. Frost the cooled brownie bites and decorate them with white icing or melted white chocolate to resemble footballs.

Notes

For a fun twist, consider adding chocolate chips or nuts to the batter before baking. The optional coffee powder enhances the cocoa flavor but can be omitted.
