- 175 g xylitol
- 150 g Greek yoghurt

- 1 tsp almond extract
- 2 medium orange zest
- 300 g almond flour
- 1 tsp baking powder
- 2 handfuls flaked almonds
Instructions
- Preheat the oven to 180°C (350°F) and line a cake pan with parchment paper.
- In a bowl, beat the egg whites until stiff peaks form.
- In another bowl, mix the egg yolks with xylitol until pale and creamy.
- Add Greek yoghurt, almond extract, and orange zest to the yolk mixture and combine well.
- Gently fold in the almond flour and baking powder into the yolk mixture.
- Carefully fold in the beaten egg whites to keep the batter light and airy.
- Pour the batter into the prepared cake pan and sprinkle flaked almonds on top.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before removing from the pan.
