Description

This Easy Peach and Raspberry Cobbler is a delightful dessert that combines sweet peaches and tart raspberries, all topped with a buttery, almond-flavored cobbler crust.


Ingredients

  • 5 peaches cut into wedges
  • 125 g (1 cup) fresh raspberries
  • 75 g (½ cups) caster sugar
  • 90 g (½ cups) cold butter salted or unsalted
  • 90 g (⅔ cups) caster sugar
  • 140 g (1 cup) plain flour
  • 1 teaspoon baking powder
  • 2 teaspoons milk
  • 2 tablespoons flaked almonds
  • Zest of 1 lemon

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, combine the peach wedges, raspberries, and 75 g of caster sugar. Mix gently and set aside.
  3. In another bowl, mix the flour, remaining caster sugar, baking powder, and lemon zest.
  4. Cut the cold butter into the flour mixture until it resembles breadcrumbs.
  5. Stir in the milk and flaked almonds until just combined.
  6. Spread the peach and raspberry mixture in a baking dish and spoon the cobbler topping over.
  7. Bake for 30 minutes or until the cobbler is golden brown.
  8. Let it cool slightly before serving.

Notes

For a richer flavor, use unsalted butter and adjust the sugar based on the sweetness of the peaches.
