- 5 peaches cut into wedges
- 125 g (1 cup) fresh raspberries
- 75 g (½ cups) caster sugar
- 90 g (½ cups) cold butter salted or unsalted
- 90 g (⅔ cups) caster sugar
- 140 g (1 cup) plain flour
- 1 teaspoon baking powder
- 2 teaspoons milk
- 2 tablespoons flaked almonds
- Zest of 1 lemon
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, combine the peach wedges, raspberries, and 75 g of caster sugar. Mix gently and set aside.
- In another bowl, mix the flour, remaining caster sugar, baking powder, and lemon zest.
- Cut the cold butter into the flour mixture until it resembles breadcrumbs.
- Stir in the milk and flaked almonds until just combined.
- Spread the peach and raspberry mixture in a baking dish and spoon the cobbler topping over.
- Bake for 30 minutes or until the cobbler is golden brown.
- Let it cool slightly before serving.
Notes
For a richer flavor, use unsalted butter and adjust the sugar based on the sweetness of the peaches.
