  • 1/2 cup granulated sugar 100g
  • 2 large eggs room temperature
  • 1 tsp vanilla extract use pure vanilla extract for best flavor
  • 1/4 cup sour cream 60g
  • 4 cups fresh peaches about 680g; peeled and sliced — or substitute 2 cans (15 oz each) sliced peaches
  • well drained
  • 1/3 cup granulated sugar 65g
  • 2 tbsp cornstarch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup all-purpose flour 125g
  • 1/2 cup granulated sugar 100g
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter 113g
  • cold and cubed
  • 2 tbsp turbinado sugar for sprinkling on top; adds crunch and sparkle

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream until fully combined.
  4. In another bowl, toss the sliced peaches with sugar, cornstarch, cinnamon, and nutmeg until well coated.
  5. Pour the cheesecake mixture over the crust, then add the peach filling evenly on top.
  6. For the cobbler topping, combine flour, sugar, baking powder, and salt in a bowl. Cut in cold butter until the mixture resembles coarse crumbs. Sprinkle over the peach filling.
  7. Sprinkle turbinado sugar on top for added crunch.
  8. Bake for 30-35 minutes, or until the cheesecake is set and the topping is golden brown.
