This Easy Pear Potato Soup is a delightful blend of sweet and savory, featuring tender potatoes and juicy pears, perfect for any season.


Ingredients

  • 1 Tbsp. butter
  • 1 large sweet onion peeled and chopped
  • 2 cloves garlic pressed
  • ½ pound boiling potatoes peeled and cut into small cubes
  • 2 medium carrots cut into small pieces
  • 2 Tbsp. maple syrup
  • 4 pears cored and cut into 1-inch chunks
  • 1 teaspoon fine sea salt
  • 2 tsp. chopped fresh thyme
  • 1 tsp. freshly ground nutmeg
  • 2 tsp. Grey Poupon Dijon Mustard
  • 3 cups vegetable or chicken broth
  • Creme Fraiche
  • Red pepper flakes optional

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Stir in the pressed garlic and cook for another minute until fragrant.
  3. Add the cubed potatoes and chopped carrots, mixing well.
  4. Pour in the vegetable or chicken broth, then add the maple syrup, cored pears, sea salt, fresh thyme, nutmeg, and Dijon mustard. Bring to a boil.
  5. Reduce heat to low, cover, and simmer until the vegetables are tender, about 20 minutes.
  6. Using an immersion blender, puree the soup until smooth. If using a regular blender, allow to cool slightly before blending in batches.
  7. Return the soup to the pot, reheat over low heat, and adjust seasoning if necessary.
  8. Serve hot, garnished with a dollop of crème fraîche and a sprinkle of red pepper flakes if desired.

Notes

For a thicker soup, blend longer. Adjust the seasoning to your taste, particularly with the salt and nutmeg.
