This Easy Pear Potato Soup is a delightful blend of sweet and savory, featuring tender potatoes and juicy pears, perfect for any season.

- 1 Tbsp. butter
- 1 large sweet onion peeled and chopped
- 2 cloves garlic pressed
- ½ pound boiling potatoes peeled and cut into small cubes
- 2 medium carrots cut into small pieces
- 2 Tbsp. maple syrup
- 4 pears cored and cut into 1-inch chunks
- 1 teaspoon fine sea salt
- 2 tsp. chopped fresh thyme
- 1 tsp. freshly ground nutmeg
- 2 tsp. Grey Poupon Dijon Mustard
- 3 cups vegetable or chicken broth
- Creme Fraiche
- Red pepper flakes optional
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the pressed garlic and cook for another minute until fragrant.
- Add the cubed potatoes and chopped carrots, mixing well.
- Pour in the vegetable or chicken broth, then add the maple syrup, cored pears, sea salt, fresh thyme, nutmeg, and Dijon mustard. Bring to a boil.
- Reduce heat to low, cover, and simmer until the vegetables are tender, about 20 minutes.
- Using an immersion blender, puree the soup until smooth. If using a regular blender, allow to cool slightly before blending in batches.
- Return the soup to the pot, reheat over low heat, and adjust seasoning if necessary.
- Serve hot, garnished with a dollop of crème fraîche and a sprinkle of red pepper flakes if desired.
Notes
For a thicker soup, blend longer. Adjust the seasoning to your taste, particularly with the salt and nutmeg.
