Description
This Easy Pear Potato Soup combines the sweetness of pears with hearty potatoes for a comforting and delicious bowl of soup.

- 1 Tbsp. butter
- 1 large sweet onion peeled and chopped
- 2 cloves garlic pressed
- ½ pound boiling potatoes about 3 medium peeled and cut into small cubes
- 2 medium carrots cut into small pieces
- 2 Tbsp. maple syrup
- 4 pears cored and cut into 1-inch chunks
- 1 teaspoon fine sea salt
- 2 tsp. chopped fresh thyme
- 1 tsp. freshly ground nutmeg
- 2 tsp. Grey Poupon Dijion Mustard
- 3 cups vegetable or chicken broth
- Creme Fraiche
- Red pepper flakes optional
Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
- Stir in the potatoes and carrots, cooking for about 5 minutes.
- Add the maple syrup, pears, salt, thyme, nutmeg, Dijon mustard, and broth. Bring to a boil.
- Reduce heat and let it simmer for 25-30 minutes or until the vegetables are tender.
- Blend the soup until smooth using an immersion blender or a regular blender in batches.
- Serve warm, garnished with a dollop of creme fraiche and a sprinkle of red pepper flakes if desired.
Notes
For a creamier texture, you can add more creme fraiche or a splash of cream. Adjust seasoning to taste.
