Description

This Easy Shepherd’s Pie Recipe features a savory filling of ground lamb or beef with vegetables and a creamy mashed potato topping, baked to perfection.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium onion finely diced
  • 2 large carrots finely diced
  • 3 cloves garlic minced
  • 2 pounds ground lamb or beef
  • ¼ teaspoon red pepper flakes
  • 3 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • ½ cup red wine
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • salt
  • pepper to taste
  • 1 cup frozen peas
  • 2 ½ pounds Russet potatoes peeled and diced into chunks
  • 4 tablespoons unsalted butter
  • ½1 cup milk
  • salt to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and carrots, cooking until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the ground lamb or beef, cooking until browned. Drain excess fat if necessary.
  5. Sprinkle in the red pepper flakes and flour, stirring to coat the meat and vegetables.
  6. Mix in the tomato paste, then add the red wine, beef broth, Worcestershire sauce, bay leaves, and season with salt and pepper. Stir in the frozen peas.
  7. Let the filling simmer for 10 minutes before removing the bay leaves.
  8. Meanwhile, boil the diced potatoes in salted water until tender, about 15 minutes. Drain and return to the pot.
  9. Mash the potatoes with butter and enough milk to achieve desired consistency. Season with salt.
  10. Spread the meat mixture into a baking dish, then top with the mashed potatoes, smoothing it out.
  11. Bake in the preheated oven for 25 minutes or until the top is golden brown.
  12. Let cool for a few minutes before serving.

Notes

Feel free to add other vegetables like corn or green beans to the filling for additional flavor.
