- 1/4 tsp vinegar
- 1 cup flour
- 3/4 tsp baking powder

- 4 eggs
- 1 cup sugar
- 1 tbsp vanilla extract
- 2 cups whipping cream
- 2 tbsp sugar
- 1 tsp vanilla extract
- 1 lb fresh strawberries
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, mix the milk and vinegar. Let it sit for a few minutes to curdle.
- In a medium bowl, combine flour, baking powder, and salt. Set aside.
- In a large bowl, beat the eggs and sugar until light and fluffy. Add the vanilla extract.
- Gradually mix in the dry ingredients and the milk mixture until just combined.
- Pour the batter into the prepared baking sheet and spread evenly. Bake for 12-15 minutes until lightly golden.
- Once baked, remove from the oven and let it cool slightly before flipping it onto a clean kitchen towel dusted with powdered sugar.
- Roll the cake with the towel carefully and let it cool completely.
- For the filling, whip the cream with sugar and vanilla extract until soft peaks form.
- Unroll the cake, spread the whipped cream, and layer with sliced fresh strawberries. Roll the cake back up without the towel.
- Chill the cake roll in the refrigerator for at least 1 hour before slicing and serving.
Notes
You can substitute other fruits for strawberries if desired. Make sure to serve chilled for the best texture.
