Ingredients

  • 1/4 tsp vinegar
  • 1 cup flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 4 eggs
  • 1 cup sugar
  • 1 tbsp vanilla extract
  • 2 cups whipping cream
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • 1 lb fresh strawberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mix the milk and vinegar. Let it sit for a few minutes to curdle.
  3. In a medium bowl, combine flour, baking powder, and salt. Set aside.
  4. In a large bowl, beat the eggs and sugar until light and fluffy. Add the vanilla extract.
  5. Gradually mix in the dry ingredients and the milk mixture until just combined.
  6. Pour the batter into the prepared baking sheet and spread evenly. Bake for 12-15 minutes until lightly golden.
  7. Once baked, remove from the oven and let it cool slightly before flipping it onto a clean kitchen towel dusted with powdered sugar.
  8. Roll the cake with the towel carefully and let it cool completely.
  9. For the filling, whip the cream with sugar and vanilla extract until soft peaks form.
  10. Unroll the cake, spread the whipped cream, and layer with sliced fresh strawberries. Roll the cake back up without the towel.
  11. Chill the cake roll in the refrigerator for at least 1 hour before slicing and serving.

Notes

You can substitute other fruits for strawberries if desired. Make sure to serve chilled for the best texture.
