  • drained and rinsed
  • 1 can (6 oz) tomato paste
  • 2 cups beef broth (or vegetable broth for a lighter version)
  • 3 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional: 1-2 fresh jalapeños

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the diced onion and minced garlic to the pot, cooking until the onion is translucent.
  3. Stir in the diced tomatoes, kidney beans, tomato paste, and beef broth.
  4. Season with chili powder, cumin, smoked paprika, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 30 minutes, stirring occasionally.
  5. If using, add diced jalapeños for added heat in the last 10 minutes of cooking.
  6. Serve hot with optional toppings like shredded cheese, sour cream, and chopped green onions.
