- 1 tablespoon olive oil
- 1/2 medium onion chopped
- 1 pound ground turkey
- 2 heaping tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 2 tablespoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper or to taste
- 1 (14 ounce) can red kidney beans drained
- 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies with juices
- 1/2 cup water or chicken broth
- Salt & pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the ground turkey to the pot and cook until browned, breaking it apart with a spoon.
- Stir in the tomato paste, Worcestershire sauce, chili powder, garlic powder, ground cumin, smoked paprika, and cayenne pepper. Cook for a minute until fragrant.
- Add the drained kidney beans, Rotel tomatoes with juices, and water or chicken broth. Stir everything together and bring to a simmer.
- Reduce heat to low and let the chili simmer for about 20 minutes, stirring occasionally. Season with salt and pepper to taste.
- Serve hot with your choice of toppings like shredded cheddar, cilantro, sour cream, corn chips, scallions, or avocado.
Notes
For a spicier chili, adjust the cayenne pepper to your taste. This chili can also be made ahead of time and reheated for easy leftovers.
