Ingredients
For the Crust
1 cup graham cracker crumbs
3 tablespoons unsalted butter, melted
2 tablespoons granulated sugar
For the Filling
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
¾ cup eggnog
3 tablespoons all-purpose flour
2 large eggs
2 tablespoons rum (optional)
1 pinch ground nutmeg
Instructions
Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
In a bowl, mix graham cracker crumbs, melted butter, and sugar.
Press mixture firmly into the bottom of the pan.
In a large bowl, beat cream cheese until smooth.
Add sugar and beat until creamy.
Mix in eggnog and flour until fully incorporated.
Add eggs one at a time, mixing gently after each addition.
Stir in rum and nutmeg.
Pour filling over crust and smooth the top.
Bake for 55–65 minutes, until center is just set.
Turn off oven and allow cheesecake to cool inside with the door slightly open for 1 hour.
Refrigerate for at least 4 hours or overnight before serving.
