Ingredients

Scale
  • 3 cups water
  • 1 cup fresh elderberries
  • 1 cinnamon stick
  • 3 whole cloves
  • 1 teaspoon minced fresh ginger root
  • 1 cup honey

Instructions

  1. In a saucepan, combine the water, elderberries, cinnamon stick, cloves, and minced ginger.
  2. Bring to a boil, then reduce heat and simmer for about 30 minutes, or until the mixture is reduced by half.
  3. Remove from heat and let it cool slightly, then strain the mixture through a fine mesh sieve into a bowl.
  4. Stir in the honey until fully dissolved. Allow to cool completely before transferring to a clean bottle.
