Description

Delicious Espresso Martini Bars featuring layers of an indulgent Oreo crust, creamy chocolate filling, and a light espresso mascarpone whipped cream on top.


Ingredients

  • 20 regular oreos
  • ¼ cup unsalted butter
  • melted
  • ¾ cup heavy whipping cream
  • 8 oz. bittersweet chocolate
  • chopped roughly
  • 2 Tbsp Khalua
  • 1 Tbsp vodka
  • 1 ½2 tsp espresso powder
  • 2 cups very cold heavy whipping cream
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 1¼ cups heavy whipping cream
  • 4 oz. mascarpone
  • softened
  • but still a bit cool
  • 2 tsp espresso powder
  • ½ cup powdered sugar
  • ½ tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Crush the Oreos in a food processor until fine and mix with melted butter.
  2. Press the Oreo mixture into the bottom of a greased 9×9 inch pan to form the crust and bake for 10 minutes.
  3. In a saucepan, heat ¾ cup heavy whipping cream until just boiling. Remove from heat and add in the chopped chocolate, stirring until melted and smooth.
  4. Add Khalua, vodka, and espresso powder to the melted chocolate mixture, then let it cool slightly.
  5. In a large bowl, whip 2 cups of cold heavy cream, sugar, and vanilla extract until stiff peaks form.
  6. Gently fold the whipped cream into the chocolate mixture until well combined, and pour over the baked Oreo crust. Refrigerate for at least 1 hour.
  7. To make the mascarpone whipped cream, whip together the 1¼ cups heavy whipping cream, mascarpone, espresso powder, powdered sugar, and vanilla in a bowl until soft peaks form.
  8. Spread the mascarpone whipped cream over the chilled chocolate layer. Refrigerate for another 2-3 hours or until set.
  9. Slice into squares and serve chilled.

Notes

For a stronger coffee flavor, increase the amount of espresso powder to your taste. Make sure all your cream is very cold for the best whipping results.
