- 3 tablespoons unsalted butter
- ½ pound skinless
- boneless chicken thighs
- cubed
- 1 yellow onion
- diced
- ⅓ cup flour
- salt and freshly ground black pepper to taste
- 1 pinch cayenne pepper
- 6 cups chicken broth
- 2 celery
- diced
- 1 large carrot
- diced
- ½ teaspoon fresh thyme leaves (Optional)
- 2 tablespoons sliced green onions
- ½ cup farmer’s cheese
- 1 large egg
- 1 ¼ teaspoons minced fresh rosemary
- ½ teaspoon kosher salt
- or to taste
- 1 pinch freshly ground black pepper
- ⅓ cup self-rising flour
- 1 pinch cayenne pepper
Instructions
- In a large pot, melt the butter over medium heat. Add the cubed chicken thighs and cook until browned.
- Add the diced onion, flour, salt, black pepper, and cayenne pepper. Stir to combine and cook for an additional 2-3 minutes.
- Pour in the chicken broth, then add the diced celery, carrot, and thyme. Bring to a simmer.
- In a bowl, mix together the farmer’s cheese, egg, rosemary, kosher salt, black pepper, self-rising flour, and cayenne pepper to form a dumpling batter.
- Drop spoonfuls of the dumpling batter into the simmering soup. Cover and let cook for 15-20 minutes until the dumplings are cooked through.
- Serve hot, garnished with sliced green onions.
Notes
Feel free to customize the dumpling herbs according to your taste preference. This recipe is great for using leftover chicken as well.
