Ingredients

  • ½ pound skinless
  • boneless chicken thighs
  • cubed
  • 1 yellow onion
  • diced
  • ⅓ cup flour
  • salt and freshly ground black pepper to taste
  • 1 pinch cayenne pepper
  • 6 cups chicken broth
  • 2 celery
  • diced
  • 1 large carrot
  • diced
  • ½ teaspoon fresh thyme leaves (Optional)
  • 2 tablespoons sliced green onions
  • ½ cup farmer’s cheese
  • 1 large egg
  • 1 ¼ teaspoons minced fresh rosemary
  • ½ teaspoon kosher salt
  • or to taste
  • 1 pinch freshly ground black pepper
  • ⅓ cup self-rising flour
  • 1 pinch cayenne pepper

Instructions

  1. In a large pot, melt the butter over medium heat. Add the cubed chicken thighs and cook until browned.
  2. Add the diced onion, flour, salt, black pepper, and cayenne pepper. Stir to combine and cook for an additional 2-3 minutes.
  3. Pour in the chicken broth, then add the diced celery, carrot, and thyme. Bring to a simmer.
  4. In a bowl, mix together the farmer’s cheese, egg, rosemary, kosher salt, black pepper, self-rising flour, and cayenne pepper to form a dumpling batter.
  5. Drop spoonfuls of the dumpling batter into the simmering soup. Cover and let cook for 15-20 minutes until the dumplings are cooked through.
  6. Serve hot, garnished with sliced green onions.

Notes

Feel free to customize the dumpling herbs according to your taste preference. This recipe is great for using leftover chicken as well.
