Description

This Fig and Cinnamon Roll Cake beautifully pairs the sweetness of fresh figs with a soft, fluffy cinnamon-spiced sponge cake, topped with a luscious honey mascarpone cream and crunchy honey-glazed walnuts.


Ingredients

  • 3 large eggs separated
  • 5 tbsp (20g) sugar divided
  • ½ tsp sea salt
  • 6 tbsp (50g) cake flour
  • 2 tsp cinnamon
  • ½ tsp baking powder
  • 2 tbsp (30 ml) milk of choice
  • 2 tbsp neutral oil plus more for greasing
  • C (375 ml) whipping cream
  • 1/3 C (80g) mascarpone
  • 2 tbsp honey
  • ¼ C (30g) roughly chopped walnuts
  • 1 tbsp honey
  • pinch salt
  • 79 fresh figs stems trimmed
  • powdered sugar
  • cinnamon
  • more honey

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. In a mixing bowl, beat the egg whites until soft peaks form, gradually adding 3 tbsp sugar until stiff peaks are achieved.
  3. In another bowl, whisk the yolks with the remaining 2 tbsp sugar and sea salt until pale and creamy. Add the milk and oil, mixing well.
  4. Sift the cake flour, cinnamon, and baking powder into the yolk mixture, folding gently to combine.
  5. Fold the beaten egg whites into the yolk mixture until no white streaks remain.
  6. Pour the batter into the prepared cake pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake cools, prepare the honey mascarpone cream by whipping the cream until soft peaks form, then folding in mascarpone and honey.
  8. For the honey glazed walnuts, toast walnuts in a pan, then add honey and a pinch of salt, mixing until coated and slightly caramelized.
  9. To assemble, slice the cooled cake, layer with figs, and top with honey mascarpone cream. Sprinkle with walnuts, powdered sugar, and cinnamon.

Notes

Ensure the cake is completely cooled before assembling to prevent melting the mascarpone cream.
