Description

This Fig and Date Bread is a delightful blend of sweet dried fruits and nuts, perfect for a cozy breakfast or a snack.


Ingredients

  • 1 cup chopped pitted dates
  • 1 cup chopped dried figs
  • ¼ cup cold unsalted butter cut into chunks
  • 1 ½ teaspoons baking soda
  • 1 cup boiling water
  • ½ cup white sugar
  • ½ cup chopped walnuts
  • 2 large eggs
  • ¾ cup all-purpose flour
  • ¾ cup whole wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, combine the chopped dates and figs with baking soda, then pour the boiling water over them. Let it sit for 10 minutes.
  3. In a mixing bowl, cream together the cold butter and sugar until light and fluffy.
  4. Add the eggs to the butter mixture and mix well.
  5. Stir in the soaked fruit mixture.
  6. In another bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, and salt.
  7. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  8. Fold in the chopped walnuts.
  9. Pour the batter into the prepared loaf pan and smooth the top.
  10. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  11. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For added flavor, consider adding spices like cinnamon or nutmeg. Store in an airtight container for up to a week.
