- 1 cup chopped pitted dates
- 1 cup chopped dried figs
- ¼ cup cold unsalted butter cut into chunks
- 1 ½ teaspoons baking soda
- 1 cup boiling water
- ½ cup white sugar
- ½ cup chopped walnuts
- 2 large eggs
- ¾ cup all-purpose flour
- ¾ cup whole wheat flour
- ½ teaspoon baking powder
- ½ teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, combine the chopped dates and figs with baking soda, then pour the boiling water over them. Let it sit for 10 minutes.
- In a mixing bowl, cream together the cold butter and sugar until light and fluffy.
- Add the eggs to the butter mixture and mix well.
- Stir in the soaked fruit mixture.
- In another bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped walnuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For added flavor, consider adding spices like cinnamon or nutmeg. Store in an airtight container for up to a week.
