  • ¾ cup walnuts crumbled
  • Figs for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a small bowl, mix flax meal and water to create flax eggs. Let it sit for about 5 minutes until it thickens.
  3. In a large mixing bowl, combine maple syrup, olive oil, mashed bananas, and flax eggs; mix until smooth.
  4. Fold in the chopped fresh figs and cinnamon.
  5. In another bowl, whisk together flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, stirring until just combined.
  6. Add crumbled walnuts and gently fold them into the batter.
  7. Pour the batter into the prepared loaf pan and arrange additional figs on top.
  8. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean.
