- 1/2 cup (60g) all-purpose flour (standard or gluten free)
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/3 cup Greek yogurt

- 1/3 cup extra virgin olive oil
- 1/2 cup honey
- plus more for serving
- 2 large eggs
- 8 fresh figs
- quartered
- plus more for serving
- 1/4 cup sliced almonds
- 1 tablespoon granulated sugar (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a mixing bowl, combine the almond flour, all-purpose flour, cinnamon, baking soda, and salt.
- In another bowl, whisk together the Greek yogurt, olive oil, honey, and eggs until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the quartered figs gently into the batter.
- Pour the batter into the prepared cake pan and smooth the top.
- Sprinkle sliced almonds on top and if desired, sprinkle with granulated sugar.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Serve slices drizzled with additional honey and topped with fresh figs.
Notes
For a gluten-free option, ensure the all-purpose flour is a gluten-free blend. Adjust the honey level based on the ripeness of the figs for desired sweetness.
