  • 1/3 cup Greek yogurt
  • plus more for serving
  • 1/3 cup extra virgin olive oil
  • 1/2 cup honey
  • plus more for serving
  • 2 large eggs
  • 8 fresh figs
  • quartered
  • plus more for serving
  • 1/4 cup sliced almonds
  • 1 tablespoon granulated sugar (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a mixing bowl, combine the almond flour, all-purpose flour, cinnamon, baking soda, and salt.
  3. In another bowl, whisk together the Greek yogurt, olive oil, honey, and eggs until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the quartered figs gently into the batter.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Sprinkle sliced almonds on top and if desired, sprinkle with granulated sugar.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Serve slices drizzled with additional honey and topped with fresh figs.
