- 30 g (2 tbsp) butter
- 3 carrots
- peeled and chopped
- 1/2 leek
- chopped
- 500 g (1 pound 2 oz) potatoes
- 1200 ml (5 cups) fish broth or water
- 500 g (1 pound 2 oz) salmon fillet
- skin removed
- 80 ml (1/3 cup) whipping cream
- 1 tbsp fresh dill or 1/2 tsp dried dill
- 1 tbsp fresh dill

Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped carrots and leek, sautéing until softened.
- Add the diced potatoes and fish broth (or water), bringing the mixture to a boil.
- Reduce the heat and let it simmer until the potatoes are tender, about 15 minutes.
- Add the salmon fillet, cooking until it is just cooked through, about 5-7 minutes.
- Stir in the whipping cream and dill, seasoning with salt and pepper to taste.
- Serve hot, garnished with additional fresh dill.
Notes
This soup can be made with leftover salmon for quicker preparation. Adjust the amount of cream based on your preference for richness.
