- 1 lb. Granny Smith apples about 2 large
- peeled and chopped into 1″ chunks
- 1/2 cup unsalted butter
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 3/4 cup granulated sugar
- 2 tablespoons bourbon substitute with dark rum or brandy
- 1 teaspoon pure vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, cream the unsalted butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the bourbon (or rum/brandy) and vanilla extract.
- Gradually add the dry ingredients to the wet mixture until combined.
- Fold in the chopped apples until evenly distributed.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
