Description
French Chicken Casserole a la Normande is a hearty and flavorful dish featuring tender chicken, crispy bacon, and sweet apples, all simmered in a rich cider sauce.

- 1 tbsp olive oil
- 2 lbs chicken thighs and legs

- 4 shallots diced or one medium onion
- 1 rib celery diced
- 4–5 thyme sprigs
- 2 cloves garlic minced
- 125g/4 oz bacon lardons or 6 strips of bacon chopped
- 2 tbsp brandy or whiskey
- 2 tbsp flour
- 85 ml/1/3 cup chicken stock
- 400ml/1 1/2 cups hard dry apple cider such as Strongbow
- 2 apples peeled cored and cut into wedges
- 125ml/1/2 cup double cream/heavy cream
Instructions
- Preheat your oven to 180°C (350°F).
- In a large ovenproof casserole dish, heat the olive oil over medium heat and brown the chicken thighs and legs. Remove and set aside.
- In the same dish, add the diced shallots (or onion) and celery, cooking until softened.
- Add the thyme sprigs and minced garlic, stirring for another minute.
- Stir in the bacon and cook until crispy.
- Add the brandy and sprinkle the flour over the mixture, stirring well to combine.
- Pour in the chicken stock and apple cider, stirring until thickened.
- Return the chicken to the dish along with the apple wedges.
- Cover and bake for 25-30 minutes or until the chicken is cooked through.
- Stir in the cream and let simmer for another few minutes before serving.
Notes
Serve with crusty bread or over mashed potatoes for a complete meal.
